Cauliflower Fried Rice

Cauliflower can be viewed as a bland vegetable to some people who haven’t experienced it when it is used in an aura of deliciousness. Cauliflower fried rice is a simple recipe that utilizes a handful of ingredients, yet is large on flavor. For added nutrition, tofu can be added to this recipe.

Ingredients:

12 oz bag riced cauliflower
1-2 cloves garlic
2-3 low sodium soy sauce
1/2 to 1 tsp minced garlic
1/2 cup frozen peas
3 tbs fresh chopped green and red peppers, optional
1 1/2 tsp olive oil
tofu, optional

whatever additional chopped vegetables, nuts, seeds, you desire

1. Put cauliflower rice bag into microwave for one minute.
2.Heat oil in a skillet. Add ginger and garlic.
3.Add carrots, peas and bag of cauliflower rice.
4.If adding tofu add it now also.
5. Cook for five minutes or so and add soy sauce. Stir and cook for a few minutes more.
