Banana Walnut Muffins

Looking for an especially yummy morning treat you can look forward to, while incorporating a healthy fruit into your meal? Banana muffins are loved by most, and they are quite easy to make. They provide a filling breakfast meal, while giving you your healthy fruit boost. To make banana muffins you’ll need the following ingredients:

-3/4 cup dark brown sugar
-2 1/2 cups all purpose flour
-1/2 tsp. baking soda
-1/4 ground cinnamon
-4-6 smashed bananas
-1/2 cup vegetable oil
-2 large room temperature eggs
-1/2 cup milk
-1/8 teaspoon salt
-1/2 tsp vanilla extract
-3/4 cups chopped walnuts (optional)


Start by preheating your oven to 425′

Use muffin cups or lightly brush your muffin pan with butter and set aside. Whisk the baking soda, flour, brown sugar and cinnamon until well blended and set to the side.

In another bowl, whisk the banana, oil, milk, salt, eggs and extract.

Pour the wet ingredients into the dry ingredients, then stir with a wooden spoon until the batter has become moistened. This will still be a bit lumpy. Gently stir in then nuts if you wish. Divide batter into the muffin pan (about half full in each).

Place your muffins into the oven and immediately reduce the heat to 375′. Bake for twenty five minutes until golden brown. Check your muffins with a toothpick to ensure they’ve cooked completell through. Serve warm or at room temperature.
