Best Vegan Baked Potato Salad Ever

The ingredients you will be using are these:

1 1/2 lbs of small red potatoes
1 Tbsp Olive Oil
Sea Salt & Ground Pepper to Taste
1/2 cup of vegan mayonaise

1/2 cup sweet relish
1 tsp dijon mustard
1/2 tsp onion powder
1 Tbsp dill fronts
1 cup celery
1/4 cup red onion
1/4 cup Vegan Coconut Bacon
1 Tbsp snipped chives

You will want to preheat your oven to 400F and cut potatoes in halves. Toss in sea salt, ground pepper, and olive oil until evenly coated. Bake for 45 minutes in oven safe dish. Next prepare dressing by combing all dressing ingredients. Refrigerate dressing while you wait for the potatoes to cool from baking. Immediately before serving, toss the baked potaoes in the dressing. Top it off with coconut vegan bacon and chives.
