No-Cook Stuffed Red Bell Pepper Salad

Whipping up a no-cook salad is a great way to save some time if you’re in a rush. This is even a great alternative to make for slower nights at home, or maybe you don’t want to heat up the house using the oven. Making no-cook stuffed red bell pepper salad takes about 10 minutes to make and serves 4 people. For more servings, simply double the recipe or modify to desired serving amounts.

To begin you will need the following ingredients:

2 cups almonds
1 cup sunflower seeds
1 cup water
2 1/2 teaspoons turmeric
1/2 teaspoon sea salt
1 green onion (chopped)
1/2 cup mushrooms (chopped)
1/2 cup carrots (shredded)
2 whole red bell peppers (to stuff)

Once you have gathered the necessary ingredients, grind the sunflower seeds and almonds in a food processor. Next add water, turmeric, and sea salt before processing once more you have a smooth paste. Third, you will move this paste to a large mixing bowl. Now add the chopped mushrooms, shredded carrots, and green onion. Using a spoon, stir gently until everything is evenly coated and mixed well. The filling is done and you can now slice the bell peppers. Slice the peppers in half and remove the seeds and stem. Finally, stuff the peppers with the stuffing you have just created. You can now enjoy your masterpiece.
