Make Oma’s German Potato Salad Your Family’s Favorite

Most people love a really good potato salad but they can be difficult to make the way your grandma used to make it, so they just buy store-bought potato salad. You no longer have to do that, as you can make the world’s best potato salad with just a bit of patience. Then you can boast that YOU are the new “grandma” who has the best potato salad in town. To start you will need the following ingredients:

4 Yukon Gold potatoes
3 Tbsp. extra-virgin olive oil
8 Oz. Bacon
1 Diced yellow onion
3 Tbsp. apple cider vinegar
2 Tbsp. whole-grain mustard
1 Tbsp. sugar
Ground black pepper
4 Chopped scallions
1 Cup of chopped parsley

The first step is to bring the potatoes to a boil an then reduce to a simmer for about 40 minutes. Then you will need to take them off heat for about 45 minutes until they cool enough to handle them. Then you will need to cut the potatoes about as thick or thin as you would like. 1/4-inch round is typical.

Next, cook the oil and bacon (chopped) on medium heat in a large pan. Stir the bacon occasionally until crisp. Once done, remove the bacon unto a paper towel to let cool the pan.

One trick is to use some grease from the bacon to seat the onions over medium heat. Once sweated, you can add the vinegar, sugar, and mustard to the pan. Salt and pepper to taste. You will want to cook this mixture for a minute or so for the flavors to marry.

Next, add the potatoes and about half each of the bacon, scallions, and parsley.

Add the cooled potatoes, half the cooked bacon, half the scallions, half the parsley.

Stir together and enjoy!
