Perfect Winter Starter- Potato Cream Soup! Simply Yummy!

During the cold months, nothing tastes better than a nice dish of warm, creamy soup. Potato cream soup is a traditional comfort food that will thrill everyone in your family. Here is an easy recipe that you can use right now to thrill your taste buds and warm your body.

You Will Need:

1 c. diced onion
2 c. diced potatoes
1 tsp. dill weed
3 cups chicken broth
½ tsp. salt
4 tbsp. butter or margarine
2 cups milk
14 tsp. white pepper

Directions

Start by combining the potatoes, chicken broth, onion, and dill weed in a saucepan and bring the mixture to a boil. Turn the heat down and simmer the mixture for ten to 15 minutes until the potatoes are soft. Place 2/3 of the mixture into a food processor and then blend. Place it aside along with the rest of the mixture that you did not blend.

Return to the saucepan and melt the butter. Then stir in pepper, flour, and salt. Once the mixture gets creamy, stir in all of the milk. Cook the mixture until it is bubbly and thickens. At this point stir in the blended mixture and the leftover potato mixture and heat.

Once the soup is warm it is ready to serve. Consider adding some grated cheese on the top of the creamy potato soup for an extra garnish.
