Pumpkin Love Cake

When fall is in the air most people think “pumpkin”, and what a better way to enjoy the seasonal treat than to make some pumpkin love cake? The simple-to-make treat is sure to have family and friends knocking on your door. Here is all you need to begin:

1 Box of yellow cake mix
1 30 ounce can of pumpkin pie mix
2/3 Cup of evaporated milk
2 Large eggs
1 Stick softened butter

Now the fun begins!

Mix the pie mix, milk and eggs together until all the ingredients are incorporated evenly.

Grease a 13X9 metal pan and pour the mixture in.

Combine softened butter and cake mix in a bowl, using a fork is best but you can use a spoon of even a frosting knife. Combine until there are no “dry” ingredients visible.

Pour the contents on top of the pie mixture. The best way to do this is to drop large spoonfuls of the cake mixture onto the pie mixture to ensure the cake mixture stays “on top”, like a layered cake.

Place the cake into a preheated 350 degree oven on the middle rack. You will want to keep at eye on the cake and pull it out when the top starts to brown. This will typically take around 38-44 minutes.

Allow the cake to cool and then top with whipped cream. You can substitute vanilla ice cream for the whipped cream. Heck, you could do both it you wanted to! Enjoy!
