Quinoa is rich in protein, iron, and fiber, and considered a superfood! Here are some delicious swaps for your favorite recipes using quinoa.

Chicken fried quinoa

-Prepare 2 fried eggs
-Prepare quinoa
-Top quinoa with sliced chicken and eggs

Southwestern style chicken and quinoa

-prepare chicken by seasoning with salt and pepper, and baking 350 degrees for 30 minutes flipping halfway and sprinkling with cheese
-prepare quinoa, and top with chicken, green onions, corn and black beans

Quinoa salad with tahini dressing

-Prepare quinoa in vegetable broth instead of water, and add in broccoli in the last two minutes of cooking
-Whisk together 1/3 C yogurt, 1/4 C tahini, olive oil, salt, pepper, chopped celery, and sliced cherry tomatoes
-drizzle sauce on quinoa and borccoli

Quinoa sliders

-Cook 2 packages mushrooms of choice, and add in 1 C spinach
-Combine 2 C cooked quinoa, 2 C mashed potatoes, cheese, 1/4 C mayonnaise, 1 egg, salt and pepper
-Mix mushrooms and spinach with above mixture, form into patties, and bake at 350 degrees F for thirty minutes

-Cook 1 C quinoa
-Add to cooked quinoa 1 C diced bell pepper, 1/4 C chopped green olives, parsley, oregano, capers, salt, pepper, olive oil
