Raw Vanilla Cheesecake with Chocolate Almond Crust
While most cheesecakes that you make are baked to a certain degree, there is a delicious recipe that you can make that features a raw vanilla cheesecake with a chocolate almond crust. Fresh strawberries on the top of the cake would pair well with the chocolate. The recipe begins by putting almonds and walnuts in a food processor. Add coconut, dates, coconut sugar and coconut oil to this mixture. You’ll also add cocoa powder for the chocolate taste. The cheesecake filling is a traditional mixture of coconut milk instead of cream or whole milk. This is a vegan-friendly dish that doesn’t require eggs or other ingredients that you would typically find in a cheesecake. Cashews and agave nectar are also added to the cheesecake filling. Since there aren’t any eggs or milk in the filling, all you have to do is pour it into a formed crust and chill for about 45 minutes before serving. If you want added flavor, you can use mixed berries instead of just one kind of berry. A chocolate drizzle or even a drizzle of honey is an option as well.
