The Hot Plate Favorite: Chicken Fried Quinoa

Chicken Fried Quinoa


2 eggs
2 Tbsp. (30 ml) olive oil
Salt and pepper
1 small onion, white chopped
1 Tbsp. garlic chopped
1 carrot, chopped
1 cup tri-color quinoa, cooked and cool
1 cup chopped broccoli florets
¼ cup soy sauce
2 boneless, skinless chicken breasts cooked


Heat small amount oil in a non-stick skillet pan over medium heat. Add eggs and then season with salt and pepper. Break yolks without scrambling with the egg whites. Cook 3 to 5 minutes till yolks set. Transfer to a chopping board set aside.
Heat the remaining oil in a pan over medium heat. Add the onion and garlic. Cook, stirring often for up to seven minutes or until tender.
Increase heat to medium-high heat. Add the carrot, cooking for 3 minutes or until heated completely. Stir in the egg. Divide between 4 plates and top with sliced chicken. Serve with soy sauce.
