Warm Winter Curried Shrimp, Apple and Cashew Salad

Cold winter days call for warm filling meals but that doesn’t mean you need to stuff yourself with meat, potatoes and gravies. You can mix light with a little warm spice to satisfy your hunger and warm yourself up with this curried shrimp salad that includes some extra protein from cashews and a good dose of vitamins from the apples. Combine that with the light shrimp and salad enhanced with a touch of heat from the curry and you have yourself a nice lite and hearty winter day meal.

Ingredients:

For the dressing:
2 Tbsp Vegetable Oil
4 Tbsp rice wine vinegar
2 Green onions – sliced thin
1 Clove Garlic minced
1 Tsp soy sauce
2 Tsp Light brown

For the Shrimp:
2 tsp. curry powder
1 lb. jumbo shrimp (16 to 20 per lb.) Peeled and deveined with tails removed
1 Tbsp Sesame oil

For the salad:
7 oz. Mixed Baby lettuces(7 to 8 cups)
2 medium apples, cored and cut into thin slices
1/2 cup roasted, salted cashews, chopped

Method:

Step 1) In a small bowl combine all the ingredients for the dressing, whisk firmly and set aside

Step 2) Place a saute pan over medium high heat, toss the shrimp in the curry powder. Add the sesame oil to the pan and saute the coated shrimp 2-3 minutes on one side then flip. Now add the dressing you have set aside and cook for one minute at a boiling point. Remove from heat and set aside

Step 3) Place lettuce on plates, top with sliced apples and cashews then ladle shrimp and warm dressing over lettuce. Serve immediately

Step 4) Enjoy!
